"Pampered Cows, Perfect Beef" is the motto of Thornhill Farm which is home to a herd of pedigree Dexter cattle. The cows happily graze the clover pastures in the Vale of York, in a natural, stress-free environment. The calves are weaned by their mothers, normally at 10 months of age, and all the stock is fed just grass and good quality hay or haylage in the winter months.
The beef is hung for 3 weeks, and is beautifully well-marbled and succulent.
Recommended by Rick Stein and Antony Worrall Thompson, it is a treat with a memorable flavour.
Thornhill Dexter beef is certainly a product that all true beef lovers should try. This small, rare breed cow provides an intensely flavoured cut of beef. Penny, the owner of Thornhill Farm famously 'pampers' her herd and the result is an award winning quality cut. It's wonderfully marbled making it very succulent and tender (even if cooked by us less tanlented cooks). It's also hung for three weeks, intensifying it's already wonderful flavour and tenderising it.
Thornhill Dexter beef is famous throughout Yorkshire for it's quality and is available through many quality oulets and restaurants. They also do Mail Order - available through their website www.thornhill-farm.co.uk
I would advise anyone who see's Thornhill Dexter beef on a menu or in a shop to pay the extra. Penny's well cared for cows provide any beef lover with an taste experience they wont forget in a hurry.
